oil temp.

My oil temp. on the pantera seems to run very high during high RPM driving like on the freeway or at the track event in vegas. 250+ degrees after about 15 minutes in to a run at Las Vegas event last year. around town runs 200 to 210 and water temp. has never been a problem
? #1 what is a normal oil temp.
#2 would a high volume/pressure pump with out a oil cooler cause this.
#3 Any recomendations on installing an oil cooler should I use a filter type adapter to plum it and could I run the cooler on the front of the car and maintain proper presure
