Stock pistons for '71s with closed chambered heads were flat tops with big valve reliefs. But after 29 years, some previous owner probably dug around in the engine. Thats why its really wise to do as you are doing and take the thing apart, to see what you've really got, then replace the suspect stuff. FYI, 9:1 compression is about all you should run with a stock cam & pump gas.
