the SS is easy to weld. You just  need a guy who does this kind of work frequently as the weld seam of the neck is a  bit tricky to reach with the burner.

I assume the SS tank  is V2A steel  so you need to have a highter or equal quality weld material, better is higher quality in this case V4A. Also MAG is what I suggest just because more folks are doing it. HOWEVER MIG is better for thin sheet metal..

Important is that you get a nice weld seam color no burning spots etc., hence a professional doing it every day..

Also you migth add a spare lit to max the original shape/roundness of the neck

AND worst case you can hard Solder it with silver solder Ag50 or so. This material flows arround <750 Cel so not so hot hence less risk for deformation. BUT it will show per its yellow color.
