Stock recommended quantity was 5 quarts with stock pan in the Pantera, but Ford upped that to 6 quarts in the Boss Mustangs for a little insurance for hard cornering oil slosh and pickup starvation. I'd go with the six quarts and shorten or remark your dipstick to indicate full at that 6 quart level.

As Pappy mentioned, this has been covered mutiple times. Briefly, there were three different oil pans possible, all of which have identical capacities and all of which look externally the same. Due to the 351C heads having only one small drain-back at eash end, the engine tends to retail too much oil in the valve covers at high rpms, so Ford recommended adding an extra (5th) quart in the same pan, for "performance" use. This was not a Pantera-specific recommendation but covered all cars using the 351C including the Boss 351. IMHO, 7 qts is too much- foaming, smoking & higher oil usage will likely result. Second point: Pantera dipsticks were lengthened Mustang dipsticks by an outside vendor. They should be exactly 38" long tip-to-retainer, per the Tech SErvice Bulletins (avalable from all Pantera vendors). A few dipsticks were incorrectly done and a few more have broken from vibration & were inexpertly fixed.
