Can I please have your opinion, about what carburetor would be the best choice.
The engine is a standard 351c with 4v heads and a 180degree exhaust system.
I am only going to use the car on the track.

My opinion would be to recommend a custom built Holley 4150 carb that is specifically built for your track use and engine parameters. I don't know about Europe, but there are severalsuch businesses in the States. I have done business with Chuck Nuytton in Rockport, Texas and I can recommend him. He does have a website. It gives you a carb that requires very little adjustment outside of the basic settings and it will perform far better than a new out-of-the-box generic carb.
