351C with 35,000 miles - Need to rebuild?

I have an early 1971 Pantera with 35,000 miles that is under restoration. There will not be any modifications to the car or engine, only restoration. The engine was probably last started about 20 years ago. It has oil in it and the crank rotates freely. I removed the cylinder heads and found no lip on the cylinder walls. My options are to completely disassemble it and do a light rebuild (or more if needed), or to simply reseal everything and use it as is. In either case it will run on a test stand before going back into the car making it much easier to correct any issues.

Which approach would you use? Thanks!
