carb and exhaust questions

Looking for suggestions for a new carb and new exhaust system for my 74 L. 351 C Engine rebuilt a few years ago to basically stock conditions with the exception of raising the compression to 9 - 1 Have a Holley 650 on it now and have all kinds of trouble backfiring flooding running rough. Looking to replace it, have had it rebuilt a couple times and I am tired of it. Thinking about a Speed Demon upon the rec of a mechanic friend of mine. Any thoughts on this one?

Second, I have a set of Hall Big Bore headers and exhausts on the car. Have been thinking about going to Stainless Steel. When the carb backfired it blew out some of the header and collector tube gasket so it is leaking I figure if I have to take them off anyway, now would be the time to replace the system.

Criteria polished stainless / good sound but not a roar
