I can vouch for the Pat Mical headers. Pricey but outstanding quality. We talked at length about the use of SS and he was against it. His headers are coated inside and out with something similar to JetHot. They come with a 3" collector and a the extension to mount whatever muffler you choose. They also come with a bung for an oxygen sensor.
Given the option again I'd would go with EFI. Cost is a factor over carburation. I'm having problems with my Demon but they may be due to "operator error".
