Carburetor cleaner is a wonderful product for dissolving gum and carbon.

In the good ol' days it was possible to purchase the choke assembly alone, you didn't have to purchase an entire carburetor.

Pony Carburetors is a business that specializes in refurbishing carburetors for classic Mustangs, they may have the part. Just tell them its a 1972 Mustang, not a Pantera.

Another option is to install a Holley choke, hook it to a 12 volt source, and rock n roll.
