clutch replacement

approximately how many hours should it take a competent mechanic to R&R a clutch and throwout bearing?

Also when you buy a centerforce kit from Hall including a T/O bearing, disc and flywheel are they the 10.5 inch disc or the 11 inch?
finally, Pantera East lists 2 different T/O bearings one is "centerforce 1.650" ID" and the other is "centerforce 1.625" ID" any way to know which one I need before I pull the tranny? I am wondering if one is for a
-1 and one is for a -2. They seem to break out their other clutch parts that way.
