Dash removal isn't totally intuitive, but it is not rocket science, either.

I STRONGLY suggest you print out a copy and give it to your shop. Go over it with them, don't just trust them to do that on their own.

Cell phone photos are quick and easy. Use them to archive the wiring as it is exposed.

Are you sure this shop is up to the task?

If you are going to use the dash removal instructions from PanteraPlace.com, I would modify step 6. Instead of unscrewing the four wires from the terminal block, just remove the two screws holding the ignition switch so you don't have to worry about rewiring them later. All you have to do later is screw the ignition switch back into the housing in that step. It's minor but one that stood out when I was reading the instructions.

My switch is like this one pictured in the site. I've seen two types. Both are mounted with two screws:
