Sounds like a great Trip Mikael!

You should get some good New Mexico food when you go from Phoenix to El Paso. Las Cruces might be a good place to stop along the way. Try anything with Green Chili (the best green chili in the world if from New Mexico!) and Sopapillas! Mmm!

On your way to Houston you'll go through San Antonio and should check out the River Walk.

Circuit of the Americas is not far off the path in Austin but I don't think there is any racing going on in your time period.
