A stock Edelbrock Performer with a 670 Holley would be a fine choice for for your application.

I've been running one in mine with 650 Holley for 25 years now. Great low and mid range torque, which is exactly what a street car needs 90% of the time and it's still strong up top (to 6,000 rpm)as well.
