General question about oil...

I use Valvoline in the Pantera, Jag and Harleys. It is spring and time to change the oil in them and the old "3000 miles or 3 months" adage comes up again. None of these has had 3000 miles since the last oil change, but all are well over 3 months.
My understanding of the 3 month rule is that the lighter solvents in the oil will evaporate off and reduce the oil's protective properties.
Is this a critical concern, or is this just a way to market more oil? I know with synthetics the 3000 mile rule is more like 5000 miles, but I have stone-age taste in vehicles and the ones I care about do not run synthetics because of the ZZDP requirement.
Do I really need to spend all day Saturday changing a bunch of oil...or can I just go out and drive them all instead?!!
