I fitted a full fiberglass body to a race car years ago that had huge uneven gaps. Fiberglass is way easier compared to the steel work you're doing...a lot itchier too.

The rocker panel is hard to fit when the rest is not original. Half to change the curv on the panel, it curv about 2 mm to much.
