Sounds a bit like a case of the 'tail wagging the dog'. By being closer to the windshield and as the seats are for and aft adjustable, I assume what has happened is that the Corvette seats are a higher bolster so you sit up higher and hence closer to the screen? You also look reasonably tall in your Avatar photo.

In that case consider;

a) removing seat tracks and bolting the driver seat to the floor (this is how I solved the problem). Not adjusatble but how often do you need to adjust the seat anyway.
b) Install lower floor pans (this is my longer term solution with a) above so that I can wear a helment for track too!)
c) find some different seats

All above solutions would be easier than re-engineering the pedal box to move pedals rearward.
