my big fat Italian tire turner

My car sits rather high in rear, I have great clearence and 10 inch Campys. It came with p7 275x55vr15....now it wears Goodrich T/A 265x5015. These seem short to me. What would be the tallest widest tire I could use? The tall tire should help top end and fuel milage. And the wider the better.
