Your huge 780 is fine if you are trying to run flat out in fifth most of the time. If you want to enjoy a crisper bottom end in the rpm range most of us see on a regular basis, you'll find a carb in the 650/670 range to be much nicer, and save a few mpg in the process.

Holley Street Avenger 670 works for me. Others are happy with the similar Street Demon.
