You're describing one of Detroit's favorite devices- an 'idiot light'. Auto parts stores sell the proper sending unit for Ford Torinos etc that can thread into a 351-C waterpump. Then all you need do is attach some sort of red light somewhere that will catch your eye. Personally, I watch my gauge....
