The Carb Shop

I just purchased a 750 double pumper from a friend here. He says that he bought it sometime back from "The Carb Shop" in Ontario California (there were also stickers on the carb with that name). With some minor adjustments, the carb runs great and made a major power difference from the Holley 670 Avenger that was on it. I did some research and found that The Carb Shop modifies carburetors from mild to wild. My carb has had the choke tower milled off, four corner idle adjustment metering blocks, air bleed and booster work. The funny thing that we noticed is that the main carb body has been turned around. The primaries still face the front of the motor but the original primary side with the milled choke tower is now the secondary side. Seems like a lot of work, they'd have to disassemble and replace the throttle shafts and plates. Anyone know why this is done? I was planning to contact the shop to ask but I know someone here knows why this is done.
