Thermo sensor in radiator

This is probably a real stupid question but I have to ask it. I've got my new Fluidyne radiator and Flex-a-Lite fans in and now im working on the wiring. My Fluiddyne from PI came with the sensor installed in the bottom and the top with a plug. I assume that the sensor is basically just a switch that just completes the circuit when the preset temp is reached e.g. 160 deg. Can I just wire one side to the battery then the other side to the relay so that once the temp is reached the circuit will activate the relay? The relay has a ground, and a 12ga wire with 30amp fuse to the battery, and another 12ga wire to the driver side fan. I wired the passenger side fan to come on with the ignition switch as Jack recommends. Of course with a separate relay and fuse. As Jask also recommends I'll hook up the switch in the console to the second fan if the sensor ever fails.
