You should use the relay to operate the fan, the sensor is probably not designed to handle the load of a fan motor starting. If the sensor has 1 connection then connect that to the relay coil and connect the other coil connection to the wire with the fuse to the battery. Connect 1 fan lead to the relay “contact” and the other relay “contact” to the wire with the fuse to the battery. The other fan lead should connect to ground.
