Thermostat or not ???

Hello everyone
I'm need your experience again !!
This afternoon , I was on the way to move the temp sender on the block & change the thermostat. My surprise was there was no thermostat in my pantera !!
What's the best ? A thermostat (180�F) or no thermostat ?!? As I will drive it mostly during the summer time , I have no problem waiting a little more until it get the correct temp to go hi-rev. The only thing I don't want is that my pantera won't turn too hot.
Let me know what you think (specially for those who live in California or Phoenix , Vegas ...) I personnaly live in Switzerland were the max we can have is 100�F in the summertime.
I will remount everything tomorrow so if I can have some idea before, that would be great
