Hawaii... What to do & see?

Ok, come month end I am heading to Hawaii from the 27th-31st (it's a small group of us, several have already been).

We'll be staying at the Hilton Hawaiian Village

So what should I look into (I don't care much for the tourist type stuff and prefer things off the beaten path)...

Suggestions???

Yeah, I definitely want the locals perspective on this.
