Guys new here, 73 Pantera, just stumbled across a large knob of some sort drivers side front, near headlights, and was thinking it may be for manual over ride for the headlights ?

You are correct.
Its sort-of an over-ride for lifting the lights. The manual erection knob only works if the lights are turned ON and all electrical power is removed from the headlight motor- as if its fuse blows. If not and you spend 5 full minutes winding the buckets up some dark night, then switch the key ON with the light switch OFF, the lights will instantly retract. There will be blood on the radiator core too due to the knob's placement.
