I'm not an expert on which cam you should use, but no, 0.275 is a low lift cam today. 30 years of progress... Think of a 351C as a short-stroke big-block, all of which take huge lifts and long durations for essentially street use. Quite a few street 351Cs sucessfully use 0.550-or- higher lift cams @ 0.285-or-longer duration, and idle fine with useable power brakes. Note- '72-&-later 351Cs have a smog-type 6 degree retarded crank sprocket, so be sure to change the cam chain and both sprockets with your new cam. Multigroove aftermarket sprockets will allow you to set the cam retarded, advanced or straight-up, to tune your power band. Also note that ALL cam grinders have a Tech Line for advice thats more up to date than this.
