Chipping will happen when the hinge pins wear, or the door-check strap is broken or worn. If you lift up a little on the open door and it moves AT ALL, the hinge pins or hinge bodies are worn. New pins can be made, the aluminum hinges can be rewelded and machined, a replacement door-check strap made, or possibly NOS or good-used hinge assemblies are available from the vendors. Diagnose the trouble and call around.
If you need a quick and (very) dirty solution to doors opening too much, here it is:
On my Longchamp both doors open too much. I thought, how about welding a small drop where the striker meets the other part? And when I looked closely I could see it had been done before(!) So I just added a little extra welding, and it works perfectly. Crude but effective...
