both my 351C engines came without oil deflector plates (rocker-arm oil baffles). Should I install some or are they not necessary?

what type of rocker arms, stock stamped steel?

You need to shield the oil filler port and the pcv from the oil splashing.
If you don't 1) the oil filler does not have the capability of 100% sealing and will leak oil 2) the pcv system is going to be flooded with oil.
As far as using the drip tabs with roller rockers, you can use them but you need to take sheet metal snips and trim them to length to make them fit.
Is it worth the effort? That I don't know BUT as one of my "friends" says, "Ford didn't bother with them for nothing?"

Having trouble finding a source both in Europe and USA. Can anyone give me a lead?

You might look for a set of original Boss 302 valve covers that still have them installed?
Someone like Virginia Mustang may have repro Boss 302 covers. If not, you need to make the rounds of the Mustang parts suppliers here.
Go to www.saacforum.com and post a wanted add for the parts that you want.
There are several people there that I know have the parts that you want but they are not normally sellers.
