It must be possible to extract things like: production date, version, etc...

Production date to some degree of accuracy, but De Tomaso was renowned for using coaches as they were pulled into the factory, often out of prestamped VIN order, so it's just 'indicative'.
Here's the VIN Decoder, but I seem to recall there were a couple erros in the month codes somewhere.
