Digital Meat Thermometer as a diagnostic tool ?

I found a Digital Meat Thermometer in the glove box of the project Pantera that I received last year. It looks like the prior owner was using it as a diagnostic tool while out and about with the car. I have a digital infrared thermometer in the garage that I use for coolant temperature readings. Does anyone know of advantages to the meat thermometer versus the infrared?

FWIW, I stick an analog meat thermometer in the AC vent to easily monitor temp while driving.
