I would like to replace the rotary on/temp adjust switch for the ac with a simple on/off switch. Is this a BAD idea? Will it cause the system to over charge? I'm AC challenged

If you have an original A/C system with no pressure switches it's probably bad idea as the A/C will function at highest setting with on/off. However if you have low/high pressure switch in the system it's not such a big deal as you have some overload protection.
