I currently have a 1" phenolic spacer under the carb. The local Ford mechanic commented that that was good for mid-range performance. The car came with 3 aluminum plates. Since I run an autocross occasionally, I was wondering if the 3/8" stack of aluminum plates with gaskets would be better for low end torque. Any opinions? Thanks.

You'll just have to try it and see on your particular combination. The cam, the intake, the carb, how much compression, and the way you drive all influence whether an increase in plenum volume via a spacer will also increase torque. I've seen some pretty good performance increases on some engines, and absolutely no effect on others.
