Our car has had a jazzy chrome thermostat housing fitted, looks like a 45 degree outlet - is this angle correct, or should it be 90 degree outlet? I've the original steel pipe off of this.

Also, what is the correct hose out of the water pump? It seems it needs to reduce from approx 45mm to 35mm - ours had this style fitted, needed cutting off to remove it sadly! (This is a Google image)

The stock assembly was at 90 degrees with a rather long steel pipe that itself had a 90 degee bend. So, short straight sections of hose were used to connect. rather than your long corrugated hoses.

As for the connection out of the water pump, there used to be a special hose molded 1-3/8" to 2". This hose rubbed against the shifter rod to the ZF and it wore through the rubber hose in time. So Ford changed to a formed steel pipe with severe bends included, sized at one end for the water pump and 1-3/8" on the other to connect to std underbody water piping. This is the subject of a TBS and is a std part from most vendors. The two-size rubber hose hasn't been available since the last century.
