This is a very specific question, but I broke the tensioning spring on the door latch mechanism (the coil behind the door handle on the actual locking hatch). Does anyone know if this is used on other early ‘70s FoMoCo cars to source a new one?

Can you give us a better idea of what you are talking about, perhaps, a larger photo showing where it is installed?
perhaps a better photo with a ruler included to give us an idea of size?
maybe just my old age but I cannot recall a piece that looks like the photo you provided

I think that piece is unique to our cars, although I have come across close cousins used on other Italian cars
A similar spring may have been used on an American Ford, but I doubt if it is serviced as a separate part.
you might try a Google image search to try and find a similar spring, or perhaps a local hardware store Spring assortment could offer a suitable replacement
The Google search term would be for a “torsion spring”.

Of interest, I found a site on line, TheSpringStore.com, which allows the user to put in ALL the criteria for the spring(s) you need and they’ll make it to order (coil size, number of turns, type of wire, length, etc.). Very helpful. Thanks again.
