You don't necessarily have to buy 'their' flywheel, just one that has their bolt pattern. Some aftermarket flywheels now come drilled for all styles of clutch. Larry Stock (PPC Reno) has aluminum, billet steel and lightweight billet steel (mid weight) flywheel's all drilled for Centerforce pattern (as well as stock)
Pantera Performance in Castle Rock, CO sells a "centerforce style" clutch that works with your stock flywheel. I've been happy with mine.
Don't be tempted to use a Mustang clutch out of a catalog. There is something different about the Pantera flywheel thickness (if I remember right) that makes the stock 351C clutch work poorly. You'd hate to have to re-pull the ZF and buy a second clutch just to save $100 on the first one!
While you're in there, be sure to consider buying a new pilot bushing. Try to find one that is a real oilite bushing. The ones you get at the auto parts store tend to have a lot of steel content and can seize up. A magnet will actually be attracted to them! I wouldn't use a needle bearing. Great for racing where you're going to replace it periodically, but for a street car, I'd choose a long lasting original style.
I think Marlin Jack, who frequents this board, makes (or knows where to get) the good ones. You might contact him for advice on a new pilot bushing.

Msaj,
Yes the center force is a 10 1/2" clutch, use to be the 11" for the Pantera was cost prohibitive, I have a centerforce 10 1/2" in my pantera with the diaphram type pressure plate with the duel bolt pattern 30lb flywheel, I have heard that with big horse power that the center force has failed and destroyed a bell housing or two,
I am building a small stroker motor and will be going to the 11" Mcleod sold threw P I Motor Sports as the have the best price & they use this set up on there 500 HP + builds with good results,
You can also go with the Hay's setups, both good company's.

The big problem is you don't have a lot of room for your throw out bearing & adapter, this has to be right.

If you don't want to hassel with it all, call Jerry at P I motorsports, already looked at all the vender prices & they are the most reasonable for this subject on the stock size clutch at 11"
