Your water temp is pretty much normal at 180-220 @ speeds above about 30mph, and oil temps should be within 5 or 10 degrees of the water, up to about 140 mph continuous. Above that, water temp tends to stay the same but oil temps start climbing. If this happens regularly, either you are driving way-fast and desperately need a full-flow oil cooler (and a fully-loaded get-outa-jail card!) or your oil temp gauge is not reading correctly. Oil temps (if true) at 280 are an engine-disaster ready to happen, as research has shown that the oil temp in the main bearings is 75-100 degrees hotter than that detected in your pan (which is where most oil temp gauges sense temps. I suspect the oil temp shown is wrong; maybe a mismatched sender & gauge or something, as even a new, tight engine shouldn't have this high an oil temp except on a big racetrack. Try a mechanical oil temp gauge and verify the very high oil temps, then let us know.
Normally your pantera does not have a voltage
regulator/stabilisor for your meters.
Get one in a automotive store and create a
correct wiring (outside your car,with the meters from your car) simular as in your car,
with the stabiliser in it.
take a separate battery and put a battery charger on it.
now put the temp feeler units in hot water
together with a accurate temp meter.
now syncronise the readings so you can be sure if you reinstall the temp meters in your
car that they are accurate.
Do not forget to mount the voltage stabilisor permanent in your car.
