On the early 71 cars, did the seats have a brown hairy straw material instead of foam???

Yes. I believe its horse hair.
The horsehair is reputed to be more comfortable than foam by many, it can be washed with soap and water and reinstalled as good as new.
It feels like several layers of cardboard to me.
Wilkinson’s upholsterer redid my seats on the Pushbutton car and used foam. They came out nice and were quite comfortable.

Well, everyone's butt is different. Went on a Drive this weekend with another Italian car club. 5 hours each way and more miles touring from the destination. Horsehair seats in my '71 were comfortable for me for about 2hrs. My wife gave them 1 hour. They were tolerable after that time, but not great. Got a thin foam pad for my wife and that helped. Few drive their panteras that far anyway.
Steve, they look more comfy than mine. I'm pretty sure my car is sold so, on to something different.

Yes, I liked it and driving it around and in a sick twisted way working on this was challenging and fun.
