When warm, my temp gauge is at 120. Or maybe, it climbs to 120 but won't go any further as the car gets warmer. Not sure. Anyone had a similar problem?
The temp gauge worked property until I had my accident. When it came back from the shop, it would no longer go above 120.

What was damaged in the accident? Did the shop need to re-fill your coolant? We need more info. All I can do is speculate, based on the car being in an accident.
Actually, if your sender is in the swirl tank, and your cooling system isn’t full, it might be reading accurately…
What I mean is your sender must be submerged to read the coolant temperature.
nuke the sender first--or at least, take the lead off the sender, hold it to ground and see if the gauge jumps. Or just replace the sender on speculation, its a simple and cheap way to start. Its less likely that the gauge has failed...
And before replacing the sender checks, as Rocky recommends, that there is enough liquid in the swirl tank for it to swim in.

The only time I've seen this happen is when the stock thermostat is not in the engine. The owner complained about the defrosters not doing anything. He wasn't worried about the non-functioning heater as he lived in AZ at the time....
