The biggest danger to that approach is getting burned out before you finish. This is as bad a job as replacing the engine, and the hands-on feelings of accomplishment are fewer while you're doing it. An acquaintence, disgusted with our lousy Lucas wiring, decided to convert the whole car to MIL-spec wiring connectors. After 7 years, he wasn't yet done and I doubt he'll ever finish. The thing became a chore, not a sports car. If you do, I'd suggest doing one system at a time, with a long driving-break in between, to avoid losing interest as above.
