I currently a bottom feed from Dennis Q using -8 lines to a 100mc prefilter to a Holley 150 putting out 7psi through -6 to 10mc post fileter to a Demon 850 (I'd asked my engine builder for a 750). I'm thinking about switching to a FITECH Meanstreat EFI unit. This requires a return line. I have the later style outside fuel filler neck. My current fuel lines and filters were built with 300psi fuel lines so I'm half done there. It's all basically new. The motor is a 402ci, chi heads, roller rockers/lifters, and in theory does 632hp on the engine dyno per the dyno sheet.

How and where to people tend to tie in a return line? I'm not overly mechanical so please be detailed. Basically I'm trying to plan out everything prior to ordering parts I don't need...

I use the stock fuel pickup which has fuel sender / low fuel on it for the return on my efi.
One thing you might want to consider is some sort of valve to turn off the "bottom feed" so you can clean the filters / pump. I will soon be reinstalling the gas tank (excellent condition) back into my Pantera and I recently replaced my old 1972 float assembly with a later combination fuel pickup/ level sender float assembly. Before I install the tank, should I leave the fuel sock off of the later fuel pickup/float assembly and use an external fuel filter, especially if I want to possibly increase the horsepower of my engine at a later date? If I would choose to retrofit my car with EFI at a later date, can I use the original (abandoned) pickup tube connection for the EFI return line or is it too small?

Most of the experienced people I have spoken with prefer an in tank pump solution. Most OEMs are in tank now. I guess many Pantera owners stay away from in tank pump because of the complicated tank shape and extra fab work. My build is getting a custom tank with an in tank pump. Maybe one of the Pantera vendors should design and offer a custom fuel tank designed with an in tank pump and all needed connections for EFI. Seems like many of us are interested in EFI systems.

Bosswrench, among others has done this. I know he has posted on this subject before. Try doing a search.
I looked into this earlier this year. Aeromotive makes several pumps that might work well in the deep tanks of our cars. I found another fuel pump maker but I cannot locate the docs I have from them....But anywho The Aeromotive pumps have several different model in tank pumps such as this.

The best part is they offer a extension kit for the system that will put the pump and sock into the bottom of the tank.
