Does anyone know what the Empty and Full Ohm readings are for a 1974 Pantera fuel gage. I would like to replace the factory gages but am not quite sure which fuel gages will work.

All Pantera fuel gauges are identical. Senders came in two varieties: with & without the fuel-out fittings. Your car has the lare tank with a fuel-out line built into the sender. Veglia-Borlotti gauges as in Panteras were 0.0 ohms full tank and about 200 ohms empty. This is reversed from VDO and some other gauges. Good luck finding a gauge that works with the Veglia sender. And changing senders will eliminate your stock low-fuel-warning light. Another thought, assuming your old gauge still works and this is a cosmetic change: Gary Hall sells gauge faces that can, with a LOT of work and some money, be changed from your old one for a new look.
